Avocado & Asparagus Salad


When you are starving and haven’t made it to the grocery yet, you will literally scavenge the kitchen and eat whatever is not tied down.

Somehow today, I found 4 edible items that were not molded, healthy and vegan. More importantly it did not require more than 5 minutes to prepare.

The finished salad is quite bright, pretty and damn, it tastes like I ordered it at a fine dining restaurant. Well, kinda.

Over the years, I have prepared many dishes for my family, no recipe, just by shear hope the ingredients I married together would make everyone’s taste buds happy.

I’d say a dozen were winners and requested again. Unfortunately I never wrote down the ingredient list or a recipe for future reference.

Well dammit I did today. Maybe it’s because I was famished, but I seriously didn’t breathe while scarfing this down. This one deserves sharing.

🌿Here are the ingredients:

– half red onion chopped

– 6 asparagus spears (cut and use about 3 inches from top of sprear.

– 1/2 avocado diced

– tablespoon of pumpkin seeds

– Trader Joe’s almond ginger dressing

🌿In a small skillet, I sauted the onions, asparagus and pumpkins seeds in a little grapeseed oil. You can use olive, coconut….any healthy oil. Sprinkle with garlic powder if you have. I’d say cook 3-4 mins. You want there to still be a crunch to the veggies. Throw mixture in a bowl or on a plate, top with avocado and dressing.

*Disclaimer – I can’t guarantee using another brand of ginger dressing will taste as good. Trader Joe’s is light, fresh and creamy. Not oily. Perfect accompaniment.
